Get some type of screen protector if you plan on having sharp objects around or near the screen
Apple monitors are amongst the best in the world any OLED TV I've ever owned or seen no matter how modern cannot replicate colors the way even an IPS panel can.

I am considering to base model with adjustable stand, the xdr model costs about double and since I don't use mac I will not be able to make use of the 120HZ refresh rate (not that I have any need for it in the first place)

so the xdr, I dont see any benefits really, I am using it for working not for movies

the base model is not great outside of having a nice looking frame; get a ProArt PA27UCGE or something instead, with a good vesa mount. it's not as sexy but it'll look much better
if you want the sexy apple frame, then the xdr is the one that is yes expensive but also actually worth its price for the screen itself too

I don't think the M4 chip is necessary per se, though driving 5k@120hz does take a bit of compute power
that said:
1. they probably use binned ones that they had on their hands anyways
2. my guess is it also allows them to reuse the iPhone/macOS image and sound processing pipeline for the webcam/mic/speakers
3. it also probably runs a small cut-down version of iOS internally so that also probably means no driver development and shit
and I'm guessing the stock+r&d savings add up such that it makes financial sense
