E2EE means nothing if the app isn't open source. You can generate keys in a predictable way so that yes there will be end-to-end encryption but anyone who knows how keys are generated can generate your private key and thus read all your messages. For most proprietary apps using E2EE I would also assume your private key is stored in a database on their server. Again, no breach of encryption along the path but they have the key so they can read your messages whenever they want.
