What do I have to know about power banks, to be able to Frankenstein multiple batteries to a single controller and have a single large power supply?

As long as you don't overload it, because they will fall back to some sort of protection mode, could be a fuse that just pops and needs replacement. Also they are not the same, because of differences in resistance you will not get 100% of max Amperage from each of them. Some will contribute more, some will do less. So you will be restricted in terms of capacity of the fastest discharging one, probably. Some will have energy left, but it would be unusable if current is too big (requires 3 banks, while you are left with 2).Just double check what I said with LLM, it's probably right, but I'm not an actually electrician, you cannot take my word. Also charging them would be manual in this setup. You disconnect them all and charge each separately. You can make it smart too, but it's slightly more complicated and depends on specs and features of your particular hardware. Make a mistake and you get burned fuses or your house etc.
If you really, really just want a big battery, buy a LiFePO4 Lithium Deep Cycle battery. They are designed for RVs, trailer-homes, caravans, boats, etc... Anywhere you'd want a shitload of power for running water pumps and other off-grid living necessities. They are fucking massive and heavy, and usually have built-in protection circuits. Some even have shit like Bluetooth so you can use an app to monitor the battery's status.Pair it with a multi-chemistry RV charger set to Lithium mode.

Normally, I can just use a 90Wh battery bank with a USB-C PD-to-12V DC 5.5mm cable instead, though.
