gnome-disk is bugged in ubuntu 20.04-24.04, they never fixed it and it can crash while resizing a big partition
plymouth crashes a lot especially on 20.04
nautilus has "infinite windows" issue when you browse a mounted SMB folder mounted with certain options (don't have them on my mind right now) and it creates an infinity of error windows if the folder is unmounted while you're browsing it
in gdm 20.04-24.04 (I can reproduce it on a fully updated system consistently on certain hardware) if you move your mouse after your typed your password it will make gnome-session crashes
NetworkManager struggles ti keep track of plugged in devices if you have a nic with multiple rj45 ports and after some time will tell you that oyu don't have network access
isc-dhcp-server isn't refreshed when you plug in new hardware, you have to restart it then unplug the cable and wait around 10 seconds, sometimes it never works and you have to reboot
locales don't apply correclty everywhere, if you swtich from non-english to english you have basically 90% chances to have a mix of english/non-english symbols, date format, etc.
they enable weird options in linux (don't have them in midn)
their initramfs is also very weird and can hang forever for no reason
piss-poor btrfs support most likely because they don't use lts kernel and fail miserably at backporting patches
if you uninstall the software-update package you can't upgrade to a newer version
apt ignores auto-update settings sometimes, I've never managed to debug this issue

also some apt udpate can break the bootloader forcing you to fix it with chroot from a live usb or something, I've done it multiple time over 4 years.
the ban is very recent so we still have some ubuntu machines around.
