It can be as boring as you want, but I've been adapting computers for elderly people for years and Linux Mint is an absolute marvel; it wipes the floor with Windows without breaking a sweat. You never need to update it, it doesn't bother you with intrusive ads, and so on.

Behind all the "it's too old" whining lies a true "it just works" system. For anyone who really uses a computer for something then Mint is a perfect OS.

Having to micromanage and fix your OS is not excitement.
If you want a challenge just set up a home server, learn how to use docker, reverse proxy etc. do something actually useful in the meantime.

I installed it on my dad's underpowered laptop years ago, never had to reinstall, never had to deal with malware since.
The funniest part is it actually gets better battery life too because the anaemic dual-core CPU isn't constantly pegged at 100%.
