I've used bloatware like Nortons AV, malwarebytes and Super-Anti Spyware that detected infections that Defender didnt.
the reason why you think Defender is so good is because its not detecting anything and you think that means you're safe.

I use all this bloatware in my job using various AVs installed on customers machines.

It would be very good but like all microsoft software, it does not acknowledge your free will. You cant turn it off, you cant stop it from running in the background, you can neuter it with herculean effort but it will always be there
