Not trying to condone whatever nonsense Mozilla is up to, but you can just add it back and set it as default again.

Was it immediately available as a default search engine in the past? I tend to add a lot of search stuff manually so I honestly don't remember. If that's the case, I wonder why they actually removed it. Probably some shady Google/Perpexity deal.
