all you need for a small and nice running GNOME installation is this (am using it for years like this and it's the best while not as bloated as the full gnome plus gnome-extras)
pacman -S gdm gnome-control-center gnome-console nautilus xdg-user-dirs xdg-desktop-portal-gnome loupe file-roller
