Why are there so many characters that are difficult to type on a standard English keyboard?

Like how the fuck do I type an en-dash.

There are over 150000 assigned characters. There are roughly 100 keys on a standard keyboard. You do the math.
The standard way is alt codes, and memorizing the codes you frequently use. You can also type some symbols through the emoji/symbol picker (win+period on windows), or IME for non-english text.

There has never been a justification to use en-dash or em-dash.

Just the stock one. If I want an en/em-dash I just press down on the regular hyphen and it pops up the various options.

Linux has a compose mode key,
you press the special key
then press a strings of other keys
and it enters the special symbol

it is super useful and neat.

but yeah, ASCII made some fuckin weird decisions. dashes are pretty damn important. wtf is ¬ or @? there's + and arguably -, but no division or proper multiplication sign...?

An em dash can join two independent clauses to create emphasis, an abrupt break, or a dramatic shift. It's more informal but also more emphatic than a semicolon or period.

wrong, plenty of valid uses of em-dash.
Though on 4chan, using anything other than -- (double hyphen) does make you look like a pretentious faggot. With en-dash, most won't even notice and just assume you typed a hyphen.

On Windows, Alt+Numpad 0150. You need the leading zero.
On Linux, it depends. On my machine it's Compose (Right Alt), two hyphens, and a period: --.
The em dash is either Alt+0151 or Compose ---
