Knobs can be handy for scrubbing through video timelines, changing the volume, or zooming in/out, or even just scrolling up/down pages.

They make dedicated ones with full 3D motion for manipulating 3D models easier for CAD and similar shit.

Guy*, it's a one man project, and these boards are customizable. The PCB has pads for various layouts and it's relatively easy to modify them. I'm getting mine in ANSI but you can choose to preconfigure it in ISO, and I'm thinking about getting a short space and the 1.25u menu key and do that layout mod myself.

100%. I use the numpad all the time and hated a separate one and I hated how cramped the compact keyboards are. I need like two inches of space on any side of my mouse to get from one edge of my monitor to the opposite edge of my other monitor so I'm not worried about space for my mouse. I also like not having to learn a third key I need to hold down to hit keys the compact boards got rid of. If you like them more power to you, but I want a full board.
