you can do it pretty much anywhere, you just have to dig way deeper most places which is expensive. There's some new tech that could make it cheaper, but it's not proven yet

Do you need to dig deeper to access convection currents? Am I right to guess that if you go too shallow, then your heat source doesn't renew itself quickly and your plant shuts down after a few decades due to the underground getting cold?

You need to dig super fucking deep and adjacent to either active or dormant volcanoes to get access to the kind of heat that can reliably generate geothermal power. The way heat underground works is that you have basically a huge convection of magma that swirls around and moves the earth. We can't reasonably access this convection though because it's way too deep. The best we can do on continents is drill near volcanoes and hope we get close enough to the magma chamber. The only reason why Iceland can do it is because they're positioned on a divergent boundary where the earth is splitting apart and spewing magma up from the mantle so they don't have to dig deep to get the heat. Drilling tech has come a long way, but reliably and safely drilling at an affordable cost that deep on continents is still going to take a long while. For the time being geothermal is virtually Iceland exclusive.

Vulcanic activity is virtually synonymously with sulfurous compounds and iron oxide.
Natural vulcanic water is essentially a sulfurous rusty soda.
