Every company is using multiple vendors and contracting companies which introduce an ever expanding zone of vulnerability. Because a lot of the schools are small, often with little to no IT department infrastructure to support the overhead. Most these schools had no option but to move to Canvas due to COVID "study from home" requirements. Canvas was just there and easy to build on, keep in mind this is shit like small specialized trade schools, K-12 schools in rural parts of the USA/Europe/Asia.

When I was in high school (graduated 2014) our grades were entered into some old ass AS/400 system that (I assume) wasn't connected to shit.
When I was in university every department basically had their own website but it was mostly just a password protected FTP server where you would download class materials. I guess you could leak it but I'm not really sure what you would gain from it. Most stuff was publically acessible anyway. Only the solutions were protected and just because most professors were lazy and wanted to reuse tests from previous years and thought that way they couldn't be leaked by students (they were leaked by students)
