Think about the log out button as a "Close everything and Lock" button.
In example: You take a break and want a blank slate when you return.

Everybody does that. Even if they can't tell you exactly why.
If you log out, you know that nothing gets executed without your will. It is all closed.
So unless you have something running that you want to stay running, log out is the sane default option to choose.
Locking the screen is the exotic one.

eBussy is entirely right. If a program requires a log-out to install properly or refresh something, then it's a retarded program. Linux has all the tools to let you dynamically adjust shit, and if something is too low level you are forced to restart, not just log-out and back in. Of course, if an official GNOME program is proven to use this method, appropriate actions will be taken to uniform behavior.

GNOME should not be in charge of compensating for other programs' shitty design. That's what Windows does under the banner of "retrocompatibility", and we all know what it has led to.

they removed it over a decade ago, there is no logout if you have a single desktop session installed. the thing is that GNOME has always had multiple desktop sessions so it pretty much never showed up as an issue for 99% of people. since GNOME 50 is now Wayland only, there are several distros now shipping with it as the only installed session, and several normies very confused as to why there's no log out anymore.
