In the real world, however, I've had far less trouble dealing with the odd software that needed to be up to date to the latest version on Debian than keeping up with the changes in bleeding edge rolling release distro, never mind pinning specific package versions.

This particular install is quite new, but I have run this type of setup before with Trixie and Sid. Nothing has broken so far. Any bugs I have encountered are also upstream bugs that are also found in Fedora for example. I also have Fedora installed purely for comparison reasons, but I am always booted into Debian.

I haven't measured. But I ran Arch for quite a while before this, and it feels like more is downloaded on Arch.

It's actually mostly Forky with some Sid mixed in, currently just Sid's browsers and kernel. See picrel.

Unlike Arch or Tumbleweed, Debian does not aggressively track latest upstream stable, so it's not quite accurate to refer to Sid as a rolling release. It just does what it needs to in order to get the next Debian release ready. Sometimes things are transitioning (e.g. libraries, 64-bit time). Sometimes all package versions are frozen when the next Debian Stable release is imminent.

But yeah, there's just something special about Debian.

Debian Stable is the best option if it meets your needs. If you are running that and are happy, I would recommend just riding that out until the next Stable release, or at least until Forky freezes.
