Because the sheer volume is not all high-quality, and C is an exceptionally picky language requiring a lot of discipline to write well, where the slightest misplaced syntax mistake or missing macro parameter can silently lead to nasty runtime errors with segfaults, data corruption, and other disastrous behavior.

It's not that LLMs can't write C or C++. It's just a lot harder to catch and prevent the inevitable mistakes and hallucinations.
