I will keep using my 20 year old 32" 1080p LCD TV until it dies. Well, dies for real. It already died once 10 years ago but I managed to revive it by replacing a blown diode with a 10 cent replacement from aliexpress and it's been chooching along without any issues every day since then.
Is the image quality shit and the screen too small? Absolutely. But it's dumb as a rock, doesn't show me any ads and doesn't even have any internet connectivity, and I love it just for that.
Show me a decent modern TV that's not an ad-riddled privacy nightmare and I might reconsider, but I doubt they exist at a reasonable price point.

I've seen recent TV models where there's no "change input" button on the remote, you have to open the Home menu (full of ads, also the TV defaults to the home menu upon waking/power on) and from there you have to dig through the menu to change it to HDMI2, etc. And already it can be a pain in the ass to block ads if the software developers know to require DoH.

So what happens when they all do it, and every TV on the market will refuse to work unless it can phone home to its ad/telemetry servers? (Yes there are commercial displays, but they're often tens of thousands of dollars)

Televisions often have low latency and 4K 120Hz these days, so a gaming monitor doesn't really have much advantage over them if you want something big. Smart TVs can subsidise their costs by selling user data, so they are available for cheaper, so people buy those instead. You can buy a smart TV, and then not connect it to the internet, and you get the subsidised cost without the data selling, so you're basically getting the masses to pay for a portion of your huge gaming monitor.

What worked for my LG G1 was not agreeing to their terms. Just say no and legally they can't do shit. Sure, none of the apps work until you do but in the unlikely event I suffer major brain damage and want to watch netflix, I can do so with literally any of the other devices attached to the TV so why would I use the much worse inbuilt apps with ads when a PS5 does it?
