When Apple uses Gemini it's either hosted on their own servers or zoned or at the very least proxied. I'm not sure which one but that's how all Apple products work. Even web requests in many circumstances by default. Google no longer stores location history in the cloud due to US abortion laws, only on device per device. So you're really just worried about YouTube rotting your brain. Which isn't installed on iOS by default.
