How can it be denied that 2,000 people were gassed and cremated in small ovens, all this over 4 years?

They're not wrong to have doubts. If this was any other historical event, there would be a lively debate about it among historians.

For instance, people often say that "the Holocaust is the best documented genocide in history". However, when it comes to gas chambers it's almost completely undocumented, and in that way it stands out compared to everything else that the Germans are said to have done (including mass killings on the Eastern Front, which they did register in their government archives). There are no mentions of gas chambers in any official documents. There are no blueprints for gas chambers. There are no invoices for gas chambers by contractors who built them (unlike the contractors who built the ovens, Topf, who kept detailed invoices and blueprints on their end).

Basically, if this was a historical debate about tea shipments between India and Liverpool in 1785, a good historian's conclusion, based on the amount of contemporary written evidence, would be that there is little to no evidence that any tea was shipped from India to Liverpool in 1785. But since this is the Holocaust, historians instead assume that (1) it happened, (2) it happened in an organized, documented way (3) on a massive scale, but (4) the lack of written or physical evidence is itself evidence of a late-war cover-up operation, which (5) somehow covered up the gas chambers and none of the Germans' other war crimes, so that (6) most of their leadership were hanged anyway.

Some german document that mention gas chambers do managed to survive the nazi purge of documents, you can find them easily in google. And even if they didn't, the absence of one evidence doesn't make 10 other evidences null
