It is very typical to massacre the population if the city is taken during an assault, instead of preemptive surrender.
All ancient peoples recognized that this was the reality of life.
The Komnene negotiated a surrender with city of Nicaea, and the city wasn't looted. The Crusaders had to assault Antioch and Jerusalem, so both populations were slaughtered.

The post conquest Arabs were pretty chill and allowed pilgrimages to Jerusalem. The crusades began after the Turkish conquest of Anatolia, and conquest of Arab controlled land. It was a combination of loss of Roman territory and pilgrims being killed on the way to Jerusalem by Turkish nomads that traditionally mark the kickstart of the crusades.
