Is evil just the absence of Good? I've heard many theists say this, but I've never been convinced.

Evil is what causes harm, not a metaphysical absence.

If you want to go in deeper, evil is actually the active twisting and distortion of good things and the absence of things things into stuff that harms., so really evil relies on having things to twist, good does not. That is, the argument should be phrased the other way round: Good is when things are completely undistorted by evil. Things were made good, but many of those things have been twisted into evil. Sorry if that doesn't get the message through quite right, its very hard to end an explanation of a tough metaphysical concept in a remotely concise manner.
