The Crusader army was a large mostly careerist force. Hardly rag tag. That's like calling the Navy Seals a loose backyard militia which trains every other weekend

Pretending like the empire had not been in existence for over 1000 years by that point without any serious rupture in the state is pointless. They sacked the capital which was where all the institution of state were. They completely destroyed these institutions and severed the head of all political leadership of the state.
