Why couldn’t indo europeans conquer the Fertile Crescent? Did the Taurus/zagros mountains make it too inaccessible or were the civilizations there just too powerful?

bit of both. the hittites were I-E speakers and controlled a bit of what is now syria and lebanon but couldn't conquer palestine or any of mesopotamia because the empires already there could resist them
europe and the iranian plateau had no civilization so steppe herders could just conquer the tribes piecemeal with no opposition.
india maybe had some remnants of civilization but once you get to the indus valley there's no real natural barriers so the mass of aryans traveling southeast could topple whatever societies existed
the mountains along the northern edge of the crescent were a big enough barrier that the stable societies of mesopotamia and egypt could mostly hold back the indo-europeans, and failing that they could assimilate the indo-europeans rather than the other way around like what happened in europe, iran and india

You also moved the timeline thousands of years in the future just to overcome the the total dearth of events in that period.
Migrations usually track climate and northward migration correlates with warming. The overall northward trend in history correlates with the temperature over millennia. That is not related to op but it does answer your sidetrack.
Roman warming, medieval warming and little ice age all correlate with movements.

They did conquer the area several times. They just never populated it as a majority because they were densely populated at the time of arrival (in contrast with a Europe that had been depopulated by massive epidemics shortly before the expansions and the Indus Valley that had been largely de-urbanized for hundreds of years before the first Indo-Aryans showed up.
