What was early Christianity like before they codified it and the general orthodox doctrinal stances got declared with things like the First Council of Nicaea? Mainly what I am asking is 1) is there anything that just seems weird now based from the perspective of what it did become (I know you have Gnostics), and 2) why exactly did X win out over Y?

They will both start naming dozens of ways in which they think this could have happened, but in the end the answer is an assertion about what method they like, not what actually happened. Nicea was guaranteed to win eventually because its the ceiling claim you can make exalting jesus. Until then no matter you chrstilogy some other dude can come along and make a more exalted claim and everyone goes wow so wise. First god gets power creeped to the ceiling in judaism and that becomes orthodox then the same thing happens to jesus.
