Why do Protestants pick and choose what they want to believe? Is Protestantism just a “build your own religion”, “create a custom Jesus” type religion?

It survived due to the Catholic Church protecting the truth. It didn’t start going downhill until the reformation and especially the emergence of US evangelicalism. Both of these movements are heretical, self-conforming religions that basically say “you can believe and do whatever you want as long as it fits into your personal idea of what the Bible is saying”

The Bible is not enough. Source: there are like 100 Protestant denominations that all believe the Bible is enough, and all believe different things. The Catholic Church is the institution that Jesus founded to carry out his ministry after his ascension to heaven. The church is guided by the Holy Spirit and official church dogma is infallible and cannot lead believers astray from God’s grace, but rather will keep its followers in the fullness of God’s grace.
Protestants are still Christian but are lacking the fullness of the truth due to their rejection of the sacraments, especially the sacraments of confession and the Eucharist.
They are basically saying, “yes Jesus I know you explicitly commanded your followers to do these sacramental rituals, but like, I think you were just, like, kidding about all that, man”
They are severely endangering their salvation by their rejection of confession and need to be prayed for heavily

I'm in a similar but different place.

I sincerely want to join and dedicate myself to a Church but can't find a single religion that has even attempted to resist Investment Banker money and corruption.

The Vatican is owned by them.
Lutherans, the ones who should know better of the Prots, ignore Luther completely.
Orthodox ignore St. Chrysostom and all the rest of their history.

What's even left for me?

My Grandfather was a Lutheran Pastor.

There are several local churches and they are gutless and weak and honestly heretical LCMS.

I'd bet they are one or two Pastor deaths away from appointing his wife as the new pastor.

If there were any actual Lutheran Churches left in the states I'd be there with the most due haste.

He also commanded giving up all your possessions and family ties, in no less direct terms than the things you mentioned. My point is that there are differing interpretations on what is meant to be taken literally versus figuratively, by whom, and for what reason.
