Why is there no modern Christian occultism? Jews have Kabbalah, Muslims have Sufism. What do Christians have?

I think you mean mysticism. And Christian mysticism is fairly rich, though one of the premises is that you are an outstanding follower of Christ's commandments and have achieved a particular level of purity. Which disqualifies 99% of people. And the 1% don't seem to really look for attention.

Looking over at my bookshelf I see Teresa of Avila's Inner Castle, a description of how one progresses towards a mystical experience of God. St. John of the Cross' Dark Night of the Soul and Ascent of Mount Carmel, I never read that one. The Cloud of Unknowing, I started reading that an the author warns that the text is only to be read by those who excel at doing the commandments, which is not my case. There was a whole school of mysticism of which Meister Eckhart was part of, I think it was Rhineland Mystics, but I've only tangentially read Eckhart and found it to be too foreign to the practices and text that I know from my denomination.

Mass, Communion, Confession. Just to name a few. Banishing demons with invocations as well. Something like Kaballah or Sufism is not necessary for most Christian sects because Christianity is more focused on God's will as opposed to the individual's will like we see in Judaism

Catholic Exorcist practices are basically hardcore demonology mixed with mystical meditations a la Kabbalah, as per the Roman Ritual
granted, they still do the regular christian rites and those are enough to save *them* according to the Catholic Church, but since an exorcist basically works to purify something or someone *else* from demonic influences, they need the extra mystic understanding of demonic forces. So it's not really occultism as a mystery cult so much as an extra step for those stepping in deep in the affairs of the Upper Spheres.
