No, they didn’t willingly Arabize or convert. It took two centuries to fully Arabize and Islamize much of MENA and it was only done by governments suppressing local languages and cultures (Caliph Al-Hakim for example literally cut off the tongues of people who spoke Coptic). Churches and Zoroastrian Fire Temples were only converted to Mosques not because the locals willingly converted to Islam, but because governments forced them to be converted to Mosques
At least the Persians resisted enough to keep their language, unfortunately the Egyptians, Levantine, and Mesopotamians weren’t so lucky…

Ironically if the Umayyad survived longer the syriac/aramaic language was the most likely candidate among the pre-islamic languages to survive together with arabic, as the bureucracy of Damascus was dominated by syrians, while they notoriusly tried to violenty eradicare Persian from the eastern provinces (one of the main reasons everyone in that area joined the Abbasid revolution)
