It's when Jesus was born. The wise men brought wrapped gifts with ribbons and bows and placed them under the pine tree they had cut down and put inside the barn in the middle of roman-occupied Judea where Jesus was born, and they all drank eggnog and sang carols while decorating the pine tree with baubles they bought from Jerusa-Mart. That's how the tradition started.

Jesus died and was also conceived on March 25th, which was the Passover date that he was crucified on. A perfect cycle according to ancient theology would make his birth 9 months later, or December 25th. There was no historical record of his birth, but theologically the December 25th date is perfectly logical because of the date Easter is celebrated. Easter was the bigger holy day for old Christians, and I think working out his birth was more autistic theology than muh Saturnalia, which wasn't even celebrated on December 25th.
