I like how the Noah's Ark basically implies Noah and his family were the first ones from the old continents to discover the Americas since they have to get tge animals that are only found there and not just that, they discovered Australia and Antarctica before anyone else too.

It doesn't imply that at all.

My impression was that the entire world except for mesopotamia was barren and that after the flood the animals from the Ark dispersed around the world

Where did Noah get the capybaras, giant anteaters, sloths, cougars, kangaroos, koalas and penguins?

He didn't.

Then how were they saved

The earth was a completely different place back then. People lived nearly a 1000 years and the soil was watered without rain. The seasons weren't even possible so all creatures were found everywhere due to steady, homogeneous climate, but more importantly, it was the beasts that came to Noah by the hand of God (he didn't have to find them, catch them or anything):

"There went in two and two unto Noah into the ark, the male and the female, as God had commanded Noah. " (Genesis 7:9)

Also consider the fact that beasts were designed to adapt to new environments so wherever they ended up after spreading from ground zero (Noah's ark in the mounts of Ararat), that changed their physical traits, meaning that one feline creature eventually turned into a bunch different ones.

In the "Ancient era" (not only in the Bible, but in non Biblical material), when people mention "whole world", they mean the area around them.

That is not only the Bible, but what others also used it similarly.

only farm animals. not literal.
universal flood was only around black sea, when ice melted due to human fire smoke.

Technically YHVH could move animals wherever after the flood using His omnipotence
