How did Christmas go from being about the birth of a rabbi to being about Santa Clause, Christmas trees, magical snowmen, and so on? From what I can tell, most of the things we associate with Christmas only came into existence in the last two-hundred years.

Secularization + breakdown of local communities, leaving only families. Pre-industrial Christmas was basically, everyone in town goes to mass, then there is some large gathering, likely with a lot of people getting drunk.

But that was the norm at times everyone knew all of their neighbors and was insustainable when urbanization exploded. Also, the authorities usually don't like rowdy gatherings so when it became convinient, governments were happy to discourage it. By the end of the Victorian era, the family home bacame the place you spend most of your free time, and there was a lot of propaganda about familial bliss (again, partially to encourage people to stay at home and not cause trouble), much of it concerning Christmas, hence it becoming a family holiday.

it didn't 'go from being about the birth of a rabbi to being about Odin riding Sleipnir in the sky at Yule night, Yule logs and tree worship, winter spirits and so on' it was the other way around. The birth of a rabbi story was overlayed on top of the Norse version all about the winter and trees and a magical old man and shit and the old man was blended with a Christian Saint to make the chimera called Santa Claus out of Odin + Saint Nicolaus
They had already arbitrarily decided that the date of Roman sun god worship - Saturnalia, December 25th - would be the rabbi's birthday to make the rabbi God more divinely legitimate to plebs in the Empire so simply going 'let's roll these other December traditions into it too' when they came to Europe and discovered germanics worshipping trees in the winter wasn't much of a stretch.

The modern version is just what happens when this syncretic trinity of different multicultural religious traditions meets the industrial revolution and Capitalism circa 1800s and has the Judeo-Roman-Norse Godhead slowly phased out from being the crux of it when modern society becomes all cringe and atheist.

Christmas is literally THE quintessential festival of The West(tm) when you really think about it and is a last surviving testament to the long history of it and all the cultures that got rolled into it. It's just a shame Christmas is so milquetoast these days.
