Actual historical helmets were custom made and fitted to the wearers heads. Props in movies are often made before actors are cast, and therefore may not fit the actor's heads correctly.

It's not exactly a phobia towards historical accuracy and more Hollywood writers can't help but "remix" a story as a form of self-expression. It's why faithful comic/book adaptations are so fucking rare in Hollywood movies but far more common in anime/video games. Hollywood writers think they are too good to be faithful to a story and are improving it by touching up stuff. Historical accuracy is much better in games/books/anime because the creators in those Fields don't have as large an ego on average.
