Because Luther only wanted books of the European Jews. They didn't use Maccabees. The original language was debated nut originally found to be Hebrew, though the only surviving source is the Septuagint. Most kjv stuff is not only from the septuagint. Also some removed books supported unofficial doctrines like Purgatory and, well, Luther was a lot of things but I think we'll all agree he didn't like the Church.

The jews have been throwing revolts against friends since at least Cyrus the Great. Possibly longer. I'd not put much stock in declarations of friendship.
