What direction does Rome probably go if not Christian? Does it just keep the Roman pantheon in some form? Are the conditions such that it is primed to adopt a monotheistic religion, and if not Christianity then something else? Was there any other religions at the time that, if things went different, could have had a greater following?

It would collapse, the reason the emporer comverted to Chirstianity was that alot of its masses had comverted into it and repression wasn't feasible anymore. Plus paganism becomes comfusing and degenerate after a long time because it doesnt have codfied structures like Abrhamic religions have

The empire was going the way of official religion, maybe not monotheistic but it had always been a historical thing for emperors to associate themselves with a god. Aurelian took this to a new level and it continued with Diocletian. For a while it looked like Sol Invictus would be the main god associated with Rome. Even Constantine didn't try to convert the empire, he was looking to divert funds to the Christian church but soon discovered there was no monolithic church to send money too. It was never about making the empire completely Christian for Constantine. Nicaea was about establishing Orthodoxy for the Christians so Constantine could send funds to the empire's approved version of Christianity. Fast forward to Julian, his initiative was the same thing, create and organized pagan structure for the empire. The empire was moving to an official religion, but it wasn't until Theodosius that Nicene Christianity won out, it could have easily been the incorrectly named Arianism. We should correctly call those believers Homoiousians.

The Cult of Mithras was really popular among Roman military until the 4th century, and the Mithraic mysteries organized into an universal religion might have taken off.

Less than 10% of the empire was Christian when Constantine converted.
