why didn't the allies just go with borders like this for trianon? if they cared about ethnic composition so much that they actually gave land to austria even though austria started the war, wouldn't this slightly larger hungary seem like it was better for everyone?

This map is taken from the austro-hungarian census, and that recorded primary language used rather than nationality. So no probably not.
Same with Hungarians, a lot of Hungarians speakers on this map didn't actually consider themselves Hungarian.
