Some less civilized cultures still eat squab (such as Portugal) but the rest of the world stopped eating pigeons because pigeons have far less meat compared to other poultry such as turkey and chickens, plus they often have a reputation of being unclean in large urban areas where they're notorious for their shit. But probably the main reason we initially stopped eating them was because they proved to be far more useful as a source of guano for black powder and as homing birds and sometimes as companions as they are quite intelligent.

The only advice I can give is to either raise them when they're still young (you have to hand feed them pretty much every day for about a month and a half multiple times a day which involves putting your hand on the side of their beak, they should naturally open their beak if you do this, and then drop seeds in and then pour some water in with a small spoon, you should know when they're full by feeling/looking at their crop where the seeds/water is stored. Alternative find one that's injured and nurse it back to health. I know some people can get wild pigeons to trust them but for the most part it's just easier if you domesticate them first.

i remember being at my grandma's house many years ago, we formed a grilled pigeon production line, the boys catch the pigeons, the girls pluck the feathers and the grandparents grilled them, can't remember the taste sadly but it's a fond memory i have of my grandpa and a cousin that both passed away, was also very illegal since pigeons are protected by law where i live despite being everywhere

I ate roast pigeon in France in the 1980s, and its flesh was utterly unsatisfying. It was like a tougher, gamier version of duck. Not worth the trouble of picking at the bony carcass.

Pigeons used to be domestic animals as messenger pigeons, but after the invention of the telegraph they largely became useless outside of a few hobbyists. They were released but survived, becoming wild and their population exploded in cities, slowly they begun being considered vermin and unclean. No one wants to eat unclean food.
