Because Trukics naturally assimilate to whatever they conquer.

Most of central Asia is Muslim and uses the Russian script(I forgot how its spelled), and the Turks are only 15% Turkic so it doesn't even count

Because Mongolians are even more prone to cultural assimilation than the Turkics. Despite conquering all of Asia, mongolian culture per se only survived in the very mongolian heartland, all the rest merged with local cultures.
