Before the Roman Empire fell "Woke" Christianity went out of fashion again and the people started being Pagan again, doing Pagan rituals again. How come this Conservative backlash didn't last and Christianity won anyway?

You answered your own question. Roman Christianity brought Germanic Christians and pagans into their empire. Eventually so many Germans entered the empire that it collapsed. Those Germans living within the former Roman empire who were pagan became Christian.
