They were actually even more advanced than I used to think. Minus the human sacrifice subhamnry, they were pretty cool. They had complex metallurgy, agriculture that fed millions, trade networks spanning thousands of miles that utilized seafaring sail ships, written languages, etc etc.

They didn't need it for wheelbarrows since they lived in mountainous regions where head-strap with baskets are more effective for carrying heavy loads, same thing that sherpas in the himalayas use.

That theory came from one of *those* kinds of academics, the kind who loves explaining away complex cultural practices that we civilized western men think are unfathomably superstitious and self-destructive with just one particular environmental factor. His flaw, as is usual for his kind, was the fact he didn't actually bother researching how Aztec society worked and how the practice of human sacrifice and ritual cannibalism worked within it, all he knew was "they killed tons of people for some reason and ate them sometimes" and then made a hypothesis around it.

In reality, ritual cannibalism was far from being enough of a routine practice to have any influence on one's nutrition, it wasn't even an universal element of the many different rituals that involved human sacrifice, and as you pointed out, they actually did have decent access to animal protein. Some people defend the theory with the even stupider argument that sure, the common people might have not had human meat as a staple food, but the noble warriors must have because they needed to fight. The problem with that argument being the fact that obviously the nobility were precisely the sector of society that could already obtain animal meat whenever they wanted, like everywhere else on earth, they were the last ones in desperate need of protein.

Human sacrifice in Mesoamerica is so ancient and universal you can't really assign one singular root to it. As for the Aztecs' brand of mass sacrifice, I'd say it was political more than anything: The State Cult of Huitzilopochtli made it so capturing battle captives to be sacrificed became a particularly prestigious thing for warriors to do and so there were more captives, which contributed to the Cult's geopolitical role of motivating and justifying expansionism and ensuring Mexica political and cultural dominance. And as for cannibalism, i reckon it was, quite simply, purely symbolic and religious in nature.
