Why does crabbing happen so often on /ic/? What causes it, and how do we prevent it and encourage more people to lift each other up instead?

Because anonymity allows people to be the absolute worst versions of themselves without having to take responsibility for the things they say. If people were able to associate the vitriol comments to an artist, that artist would not be very popular and probably wouldnt have many friends.
That's why crabs never post their art.

Marina Abramović’s Rhythm 0 is perfect example of this. I find it very fitting considering it was performance art. Basically, she wore a blindfold and stood completely still for 6 hours. There was a table in front of her with things that ranged from harmless like feathers, to things like a knife, scissors, a loaded gun, etc.

People initially were nice, kissing her, some patting. Then progressively became more depraved. Groping, fondling, cutting her clothes off, holding the loaded gun to her head, pricking her skin. After the 6 hours ended, she removed the blindfold and the people in the room couldn't look at her ashamed of what they had done.

The piece highlights the depravity of people when offered the shield of anonymity. This board is frequented by trolls, exhausted and demoralized artists, talentless, and even talented but cruel artists. Under the guise of anonymity, they can attack other artists for whatever reasons their little hearts desire. That is why, this board is infested, and why if you are to engage with this community, it should always be with a big fat asterisk.

Why help them get better when doing so just add more competition for art jobs? The field is saturated with pros already.
Jokes aside, it's in your best interest to have a strong network, so help others, if one of your pupils make it, they can help you in the future, that happened with Hayao Miyazaki and his animator teacher.

I go on 4chan because I want to be among the grumpy crowd, if I disliked it, I'd just be on deviantart and Reddit. It's almost too mellow and casual here for me. Too little mockery to fuel my ambition.

According to the recounting of the performance, bad actors wound up sticking around to kind of relish in 'the game' with other bad actors, and because of this, the boundaries of what was allowed began to be pushed.

You'd think they'd want to dip out to avoid social judgement, but it's similar to a human statue. You have douchebags that want to fuck with them, because they're not allowed to move to get them to break. You could make assumptions about what drives the psychology here, but the reality is everyone has their reasons for the why. During the art piece, there were actually people trying to defend her which created factions within the spectators. It's really an interesting view on the dynamics of humanity. Where some see a depraved game, others empathize and want to protect dignity or decency.

Not be cynical or to say we're all monsters underneath, I just think it's a good way of showing that there's a spectrum between "good" and "bad" and that's what being human is.

This is what happens with any online community. Although not necessarily true (or only partially true), if you successfully portray a group as X, people who are X will see this and think that group is for them. Eventually these newcomers outnumber the original users and perception becomes reality. It's a sort of flanderization.

Being helpful is hard, helping people who don't want to be helped is impossible. There aren't more crabs here, the anonymization just makes people less afraid to call out shitty self-defeating behavior. You cannot fix these people. If you want to have some fun shit talking them, go ahead, it does you more good for you than any amount of help would do them.

Regardless, there are actually significantly less 'real' crabs here because the lack of notoriety doesn't promote the sequestering of power. If you go on any art discord, you won't find helpful people, you'll find people who want to show off how smart they are, so you never get real helpful answers to anything. Actual crabs aren't the people throwing around insults. Actual crabs are the people who force feed you their own methodology to make sure that anything that person learns is downstream from the crab.
