I don't think it's down to realistic vs. childlike. Nobody would say Michelangelo's or Leonardo's drawings are soulless. To me, it's a matter of the work feeling too mechanical, as if anyone could have done it by following a prescribed set of steps. Photorealism is perhaps the most obvious example. Soulful work shows the imprint of its author's mind. It shows discrimination, decision-making, emphasis and de-emphasis. Tools that are more responsive to subtle changes in pressure and angle, and less amenable to correction (such as nib pens, brushes and ink) tend to produce more soulful work, which is why digital struggles to match the soulfulness of trad. But this is not a hard and fast rule. An oil painting with a high degree of finish can be soulful if it is designed, and the expression is poetic/expressive rather than purely mimetic.

John Henry Fuseli is a good example of soulful oil painting. His work is "realistic" in the sense of exhibiting anatomy, form, volume, space and lighting, but it is also clear that his figures are invented/idealized and his lighting is designed to direct the eye of the viewer rather than to be strictly accurate to a particular lighting arrangement. Nobody else could have done this painting in precisely this way, except by deliberately imitating Fuseli after the fact. This is not something you would arrive at by copying references.
