HDR just works fundamentally differently compared to SDR. With SDR, you have the expectation that every display will use all of the data you provide, even if it does so in a flawed manner. You don't get that with HDR; the computer or the display is expected to tonemap the image to fit within the capabilities of your display, and where that tonemapping occurs or what algorithm it uses is anyone's guess. It's kind of obnoxious.On the other hand, actually DRAWING in HDR is not going to be too different than drawing in SDR, except you just have brighter colors you can use. Or, if you're like me and you draw in scene-referred space (aka you manipulate scene-accurate colors which are then tonemapped into something your display can show, kind of like how a 3D renderer works), it's just a matter of choosing scene-accurate colors. I've actually been painting this way for years, long before I had an HDR display, so I could re-export a lot of my art for HDR once I figured out how to do that.
