Are there any reliable ways of getting paid as a freelance artist without having to divulge your identity to clients? I'm fine with letting the platform itself know obviously, just not every single person that commissions me (I'm doing SFW art) I've read some articles claiming you can do it with Gumroad but I don't see any artists I follow actually using it that way so I'm skeptical

On your side: clients make the payment to patreon, not you, so they can't later refund the shit, and once patreon take their part, they leave the money open for you to retire. On the client side: they are paying to patreon, so in their payment info it only says that is made to "patreon blablabla-patreon_page_name_", not your paypal email, not your real name, only your patreon page name, so they cant even know your email. Is the best option, only downside is that patreon will take their part. All of the other options... you must research that yourself because each country has his own things. In most of them paypal is the norm and they will see your email and real name if its a normal account, with a pro account i dont remember, i think they can't see your real name yes, but they will see your email. For SFW only faggots care of identity because you want the most people to know you and if they can associate your art to your iamge is even more money, unless you dont want to pay your taxes. For nsfw it's only somewhat understandable specially for people that are making illegal shit, but most people use PayPal anyway.So if you want the ultimate solution, Patreon, with one-time purchases, is the "shop" option they offer. This way, they only pay for one product (in this case, one commission) and they don't pay a subscription fee.
