Streaming already is stressful enough as it is. They don't want to worry about getting stuck on a sketch that isn't going anywhere.
Maybe they don't want you to see certain things. Tracing, abusing the liquify tool or spending one hour to draw a hand.
That, or they don't want you to see their reference material which likely includes other artists that they copy from.
Those artists usually have something to hide.

Once you've done the entire sketch the subsequent steps are kinda just autopilot and having to stream while sketching will be quite straining unless you're used to working while being watched

To show off the rendering instead, which is less mentally intensive, and usually quicker too.
Rendering is also probably the more fun aspect to watch for most, as it has that 'wow' factor of becoming a finished piece, while a sketch will most likely only remain a sketch by the end of the stream (or receiving lifework if the streamer is speedy).

If they're doing a full day long stream, I'm sure they could show off the sketching, but what if the sketch is poorly executed, or just a bad idea that can only be found to be such when put on paper? It can bring the stream to an awkward screeching halt.

This is all to say, I can totally understand why an artist may prefer to sketch privately, rather than do that on stream.

sketching out an idea can take long amounts of time of boring reference hunting or just looking at the screen deciding what to do. writer's block for artists if you will. not exciting for the audience
early sketches can be pretty sloppy and many ideas can be thrown out. you don't want to get someone getting sensational and calling an artist a fraud for sketching something bad. look what happened to proko

also when you're streaming, you have to be decently attentive to your viewers, since sketching requires more thinking than inking or coloring its harder to do when your focus is split. inking and coloring are pretty straight forward processes

speaking as someone who does this: it's because I know myself well enough to know that my blank page to finished sketch process is typically hard to present, and also doesn't always result in something I'm satisfied enough with to proceed with finishing. having a satisfactory sketch before the stream guarantees that I have something to build off of without restarting or noodling around.

I can't speak to how common it is that it's people using ai/3D but i wouldn't be surprised- but I don't believe it's an ALWAYS/EVERYTIME thing.
