Do you use any online tools for this?

Use case e.g. A character has green hair and red eyes. But I can be flexible. Which greens and reds look good together?

This lets you drag some colors around and they stay somewhat correlated in Analogous mode. any other tools you like to use?
Or do you guys just take color theory courses and that helps you paint?
Or just borrow palettes from art pieces you like? Is that really the best way?

Right now I'm pretty much just randomly guessing what colors look good and then changing the hue for different parts of my art until it looks okay but I feel like I'm missing thousands of better possibilities.
