It's got nothing to do with being an adult, but they're basically saying as your observation skills improve or when you focus on particular subjects, once you notice something that adds more believability to your work such as the volumes of a muscle, or the workings of a mechanical part, you can't un-notice it and will continue to keep noticing it.
