Words can also have multiple meanings.
A wood worker working his craft, his art, may make a table, but most wouldn't call it art - unless it was a particularly spectacular table, in which case we'd say "it's a work of Art!"
So there's art as a craft, then there's "Art", as a particularly good display of the craft.

So no, not all literature, architecture, or visual art, is Capital A "Art" - especially performance art, which not only is it not "Art", it's not an art either, it's just shit.

No. Lots of things evoke emotion. If I step on a lego brick, I'm experiencing pain - that isn't a moment of Art.
If I step outside into the sunshine and feel good, is that Art?
The emotions I feel when talking to a friend, is that conversation Art?
If someone shits himself, and grosses everyone out, did he just create some Art in his pants?
Using the evocation of emotion makes Art far too broad, to the point that anything and everything can be Art, and also misses one of the core tenets of a piece of Art - being a skilled display of a craft.
If I say a movie is bad, and a poor display of the craft, then it's not Art.
And like I said above, performance art is neither a display of good display of a craft, nor is it a craft at all, it's just shit.

Besides, your premise is flawed; getting angry at it being in an art gallery is not an emotional response to their work, it's an emotional response to the galleries' decisions to have allowed the work to be displayed, which is not the same thing.

Everyone has their view on what art is, and everyone is correct in having that view, since art doesn't have a concrete definition. Personally I say art SHOULD be solidly defined, so we can categorise what actually is and isn't art. At least it'd stop this perpetual shitty 'what is art' debate.
