Are tutorials a trap? It seems like in art, you have to figure out how stuff works for you specifically. But if you defer everything to someone else and solely consume their tips and tricks then you're robbing yourself of a learning experience, right?

Tutorials are just that: tutorials. You try it. If it works, you try and see what you can build from that. See what works and what doesn't. As long as you're struggling to do something you are learning. And yeah with experience you realise the tutorials are just what works for other people, could work for you. Only way to know is to try it yourself
