actually when mass baptisms happened (middle ages) peasants didn't have surnames yet and wouldn't have them for the next several centuries to come

it's more about that in 18-19th century when the need to have surnames for every inhabitant of the country appeared due to development of state administration, peasants got their last names usually forged ad hoc by their noble masters, based on Polish words/roots. If this process was happening already after partitions of PLC, the occupants would often try to humiliate the nobility by giving their surname to all their peasants. That's why there are so many peasant families with noble surnames nowadays.
