I dunno why, but translators tend to take unnecessary liberties. For example, I was playing 空の軌跡 and the JP track mentioned the word combination in english because it was a tutorial for combined attacks, but the subtitles said "We must end it now" or something like that.

You are not wrong. Technically it can also be read as you read first. N限り has this intrinsic ambiguity in how N is limited, and 今度限り can mean either "only the next time" or "the next time being an endpoint within a certain range in some sense".

Interpreting the quoted sentence as the translation is just a conventional thing I guess, and to remove the ambiguity, if you mean "the next time only", you can use sayings like
>今度に限っては
>今度だけは
or even simply replace で with は

I can't explain why just は erases this ambiguity very well, but I feel like that in sentences with "で+time-related expression" the particle で often marks a particular (end)point in the flow of time, like
>明日で休暇が終わりだ。 (The vacation ends tomorrow.)
>10時で閉店です。(Our shop closes at ten.)

No idea what level your anything is so other than formal grammar study here and there, read a lot of Manga, LNs and VNs for fun? Watch Japanese youtube (ideally a second account so you dont get distracted by english clickbait nonsense), tv shows, drama, anime.
The more you use Japanese the better.

Don't lock yourself down to one game, you can play it to get started if that's what you need to get through the basics, but you need to move on at some point and create your own learning path because no course will cover everything.
