Grinding chicken meat feels a waste since all the cuts are great. Pork and beef have plenty of cuts that are better minced.

As long as chicken sausages/wurstel still have some fat in them, else they have a plastic/rubber like texture I hate.
I prefer cooking my chicken over it being turned into a flavorless wurstel, pork versions is how god intended it to be.
