depends, some -ski surnames are typically Jewish, like when the root comes from the name of a big Polish city, let's say Warszawski, Krakowski, Poznański - these are very Jewish surnames.
But there are also a lot of typically Polish surnames that were adopted by Jews and then they're not distinguishable by surname alone.

in Poland it was also a thing at first (-ski is just an adjective meaning "from") but around 15th century nobility "copyrighted" this ending and it was banned by law to use it by non-nobles until the end of PLC, when occupational administration, especially Prussians, started giving out -ski surnames to Jews and peasants, to humiliate Polish nobility as well as it was just an easy way to distinguish their new Polish subjects from old German ones.

So while traditionally -ski surnames are associated with nobility, nowadays it's totally not a rule, there are a lot of typically peasant/Jewish -ski surnames, as well as many noble surnames are held by non-nobles.

Generally nobility in Poland is just like brahmin caste in India - surname is a strong indicator but not the only one and not the absolute one, people just know who is of noble origin (if someone still cares, many people do tho)

You're just obfuscating up the obvious implications of each one. Polish -> ethnic Pole from a historically Christian (Roman Catholic) family. Jewish -> ethnic Jew whose ancestors lived in historically Polish territory for centuries and whose family has or had a Polish surname.

Ashkenazi Jews have some Western drift in them due to the centuries they spent living in Europe.
